Recipe Name: Baked Bass Nantucket Style Servings: 6
2 pounds of bass fillets, skinned
1 onion, chopped fine
1 bunch scallions chopped
1/4 cup olive oil
4 stalks celery, chopped
3 carrots, sliced
1 two- pound can whole tomatoes
1/2 teaspoon dried mint leaves
1 cloves garlic, minced
salt and pepper to taste
1 lemon, cut into wedge
Pre-heat oven to 325 degrees. Saute onions until limp; add celery, carrots,
scallions, tomatoes, mint salt, pepper and garlic. Simmer 15 minutes. Spoon
half the mixture into a buttered baking dish; cover with fish and then the remaining sauce. Cover and bake for 1/2 hour or until fish flakes. Serve with lemon wedges.
